Sweet, warm, soft, with a thin layer of flowers and clove under the cinnamon. Less hot than Vietnamese cinnamon, and with more layers.
Ceylon cinnamon bark has less cinnamaldehyde than Vietnamese cassia from Tra My or Chinese cassia, but more eugenol and linalool. So Vietnamese cinnamon is strong, straight and hot, while Ceylon is gentler and more complex. Neither is “better”; they are two different smells.
You can tell them apart by the quills too: Ceylon cinnamon is many paper-thin layers rolled together, cassia a single thick layer curled around a hollow. What is sold in Vietnamese markets is almost all cassia.
