Coriander seed essential oil

Sweet, lightly woody, slightly floral, with a little warm spice. It is nothing like coriander leaf, and that surprises almost everyone.
The oil is distilled from the seed and is up to two-thirds linalool, so it is closer to lavender and rosewood than to the bunch of herbs at the market. The pungent smell of the leaf comes from a completely different group of aldehydes, which are almost absent from ripe seed.
People in northern Vietnam have a ready reference: the pot of mùi già water on the last afternoon of the lunar year, used to bathe before Tet. Mùi già is coriander that has flowered and set seed, and the smell of that water sits right between leaf and seed — much sweeter and warmer than the leaf.
