Ginger essential oil

Warm, dry, with a woody note and a touch of soap at the edges. The sharp zing of fresh ginger root has all but disappeared.
That is the most striking difference. A freshly cut slice of ginger has three layers — zing at the top, warmth in the middle, earth at the end — while the oil keeps only the last two, because the steam takes away the most volatile part.
So don’t expect ginger oil to smell like a slice on the chopping board. It is closer to cooked ginger, and that is not the distiller’s fault but the nature of distillation.
