Cool camphor at the top, then a sweet, warm pine-resin note. The two layers are quite distinct.
The cool layer is camphor. The warm sweetness is bornyl acetate, the compound that also gives many conifer oils their sweetness. A spice seed that smells of both the medicine cabinet and a pine forest is unusual.
Amomum belongs with green and black cardamom, three ginger-family seeds that are often mistranslated for one another. Green cardamom is cool and sweet, black cardamom smoky, and amomum the most camphoraceous of the three.
