Turmeric essential oil
Curcuma longa
Nghệ · Zingiberaceae
Earthy, slightly pungent, with a dry woody note. It is heavy and lasting, with no bright part at the top.
The smell is nothing like the colour. Beginners usually expect something warm and golden and are surprised to get something closer to damp roots, because the yellow comes from curcumin, which is almost odourless.
In Vietnamese cooking, turmeric nearly always comes with something else: turmeric with fish, turmeric with fermented rice, turmeric with galangal. Smelling turmeric on its own is therefore a quite different experience, and a little unfamiliar even to practised cooks.
