Earth, camphor, warmth, a little bitterness. It is cooler and airier than yellow turmeric, which is heavy and pungent.
Zedoary is a separate species, not turmeric that has been kept too long. Cut the root and the flesh is bluish-purple rather than orange, and its oil carries more camphor and 1,8-cineole, so it leans towards galangal and wild ginger.
Its English name is zedoary, and some sources call it white turmeric, which is confusing because the Vietnamese name, nghệ đen, means black turmeric. The botanical name Curcuma zedoaria is the firmest thing to hold on to.
