Lemon, but dry lemon, without any of the juiciness of the peel. Under the lemon is the smell of freshly cut grass, and a thread of something slightly soapy runs from start to finish.
That thread is what pulls lemongrass towards the green family rather than citrus, even though its name and your first impression both say the opposite. It also lasts much longer than peel: lemon peel fades in half an hour, while lemongrass stays far longer before it softens.
Anyone who has bruised a stalk of lemongrass for cooking knows the moment the smell bursts out where it was crushed. The essential oil is that moment kept and concentrated — and for the same reason it loses the freshness of a stalk just snapped.
