Grapefruit essential oil

Sour, faintly bitter, with a very thin sulphur note that makes it fresh in a way no other citrus is.
That note comes from a sulphur compound the human nose picks up at concentrations so low they barely register as a percentage. It usually does not appear as a line on the analysis, but without it grapefruit is just a pale orange.
Set it beside Vietnamese pomelo peel and the two species are plainly different: Vietnamese pomelo is bitter and powdery, grapefruit sharp with that slightly “green” freshness. The same word in Vietnamese covers both fruits, but the two oils cannot stand in for each other.
