Dry lime with a leafy edge, and a pungent note the peel does not have.
It lacks the juiciness of the peel entirely, but makes up for it by lasting much longer: lime peel fades within half an hour, while the leaf stays until the end of the session.
Anyone who has shredded lime leaves over a plate of boiled chicken knows this smell. What few people notice is that the leaf has to be cut to release it; left whole it is almost silent, because the oil sits in tiny pockets that only break when cut.
