Pomelo blossom essential oil

White flowers, sweet and waxy, with a green edge of citrus peel. It is close to neroli, but rounder and sweeter.
Pomelo blossom does not survive distillation, so the product is an absolute extracted with solvent. An absolute keeps the waxy, honeyed part that steam takes away, and so it is closer to the flower on the branch.
People in northern Vietnam know this smell from February, when pomelo flowers are sold by weight to scent tapioca flour and tea. It is one of the very few flower scents Vietnamese people use to perfume food, so the memory of it lives on the tongue as well as in the nose.
