Ripe apple, hay, honey. Sweet like fruit rather than like a flower, which surprises most people the first time.
The apple comes from a group of esters rarely found in other oils. Even the name chamomile goes back to Greek for “earth apple”, so people long ago heard exactly that note.
German chamomile is a different plant and gives a completely different oil: ink-blue, grassy and medicinal, with no apple. Both bottles may say “chamomile” but they cannot replace each other, and the colour of the oil is the quickest way to tell.
