Cardamom essential oil
Elettaria cardamomum
Bạch đậu khấu · Zingiberaceae
Cool at the top, warm and sweet in the body. The opening is close to camphor, then it moves into a sweet spice layer a little like dried lemon peel.
Two compounds share the work: 1,8-cineole gives the coolness, terpinyl acetate the warm sweetness. Few spices carry both ends of the temperature scale in the same seed.
Do not confuse it with the black cardamom in a pot of phở. That is a different plant, with large pods, smoked, so it smells heavily of smoke and camphor. Green cardamom has small pods with green skins and no smoke at all. The two are often mixed up because English calls both of them cardamom.
