Clary sage essential oil
Salvia sclarea

Hay, tea, slightly sweet, with a warm musky note underneath. Hard to file as flower or leaf, because it stands in between.
The main compound is linalyl acetate, as in lavender, so the two share a soft sweetness. What sets clary sage apart is that musky layer, and it lasts much longer than lavender.
This plant also yields sclareol, the raw material the fragrance industry uses to make ambergris substitutes. In other words, part of the “marine musk” in a great many modern perfumes traces back to a plant growing in a field — and if you smell the oil carefully you can hear that family resemblance.
