Spearmint essential oil

Mint that is sweet and soft, not cold. It has an unmistakable minty smell but none of peppermint’s bite, which makes it far easier to like.
The reason is that it contains almost no menthol. Its main compound is carvone, one of the best-known examples in the chemistry of smell: the molecule exists in two forms that are mirror images of each other. One form smells of spearmint, the other of caraway seed, and the human nose tells them apart easily.
The Vietnamese herb húng lủi, eaten with rice noodles, smells very close to this. Anyone who knows it will recognise spearmint at once — and will understand why it is nothing like a peppermint sweet.
